Chili con Carne (using Grass Fed Ground Beef)


Serves 8.


1 tablespoon butter or olive oil
1 small onion, chopped
1 clove garlic, minced
1 pound Grass Fed Ground Beef
1 teaspoon or more sea salt
½ teaspoon cinnamon
1 teaspoon cumin
1 tablespoon chili powder
1 dried chipotle chili (optional)
1 teaspoon sugar
1 14.5-ounce can diced tomatoes (you can dice your own tomatoes)
1 15-ounce can kidney beans
1 8-ounce can tomato sauce (make your own tomato sauce)

Melt the butter in a large heavy pot.  Sauté the onion and garlic in the fat until onion is translucent.  Add the meat, break into chunks and sauté until the meat is browned.

Add salt, spices and sugar and stir.  Then add tomatoes, beans and tomato sauce.  Cover and simmer about 1 hour or longer.  The longer it cooks, the thicker it becomes.
